Isomalt / Isomaltitol / Palatinitol
ISOMALT ( Isomaltitol ) is also called Palatinitol and is generally called Isomalt by the market.
It is a functional sugar alcohol which has been newly launched worldwide to replace sucrose, starch sugars and other sugar alcohols.
Properties: white, sweet, in granule or powder, no impurities, no caking.
In this technology sucrose is used as raw material. Sucrose is Isomerized by enzyme to become Isomaltulose, of which the unsaturated carbonyl will be hydrogenated with the help of catalyst to become saturated hydroxy under the conditions of high temperature and pressure, thus changing Isomaltulose into Isomaltitol. In fact, Isomaltitol is the mixture of GPS and GPM.
